Cream Of Crab Soup Recipe

I absolutely love cream of crab soup, and I am constantly looking for new spins on cream of crab soup recipes. This is a nice recipe, but please be careful not to scald the milk.

Ingredients

  • 1 lb. Maryland Backfin Crabmeat
  • 1/4 c. (1/2 stick) butter or margarine
  • 1/3 c. flour
  • 1 c. chicken broth
  • 1/4 tsp. pepper
  • 5 c. milk
  • Salt to taste

Directions

  1. Remove cartilage from crabmeat, melt butter in 3-quart pan.
  2. Blend in flour and stir until smooth.
  3. Slowly stir in chicken broth and pepper.
  4. Simmer for 2 minutes. Add milk and cook slowly, stirring constantly until thickened. Do not boil.
  5. Add crabmeat to milk mixture and salt to taste.
  6. Remove from heat and serve. Makes about 10 cups.
