Tomato Pie Recipe

This recipe is very easy to fix and is a big hit with my family, even with my mother-in-law who doesn't care for vegetables. This pie is delicious!!

Ingredients

  • 1 (9 inch) unbaked pie crust
  • 2 large tomatoes
  • 1/2 onion sliced
  • 1 teaspoon Italian seasoning
  • 1 1/2C mayonnaise
  • 1 1/2C shredded cheddar cheese

Directions

  1. Preheat oven to 350 degrees
  2. Blanch tomatoes for 1-2 minutes
  3. Peel and slice tomatoes and drain well on paper towels
  4. Place sliced tomatoes into pie shell, sprinkle with seasoning, then place the sliced onions on top
  5. Mix the mayonnaise and cheese in a small bowl.
  6. Spread the mixture on top of the tomatoes and onions
  7. Bake in preheated oven for 45 minutes
  8. Remove from oven and let stand for ten minutes before serving
