Tomato Pie Recipe
This recipe is very easy to fix and is a big hit with my family, even with my mother-in-law who doesn't care for vegetables. This pie is delicious!!

Ingredients
- 1 (9 inch) unbaked pie crust
- 2 large tomatoes
- 1/2 onion sliced
- 1 teaspoon Italian seasoning
- 1 1/2C mayonnaise
- 1 1/2C shredded cheddar cheese
Directions
- Preheat oven to 350 degrees
- Blanch tomatoes for 1-2 minutes
- Peel and slice tomatoes and drain well on paper towels
- Place sliced tomatoes into pie shell, sprinkle with seasoning, then place the sliced onions on top
- Mix the mayonnaise and cheese in a small bowl.
- Spread the mixture on top of the tomatoes and onions
- Bake in preheated oven for 45 minutes
- Remove from oven and let stand for ten minutes before serving
