Ingredients
- 8 to 10 Yukon Gold Potatoes
- 2 cups heavy cream
- 1 cup milk (whole preferred)
- 1 tablespoon butter or margarine softened
- 2 cloves of garlic pressed or 2 teaspoons minced garlic
- 5 to 6 cups shredded cheddar (sharp cheddar preferred)
- 3 tablespoons flour
- 1 teaspoon each salt and pepper
- 2 teaspoons dried parsley
Directions
- Preheat oven to 400°.
- Wash, peel, and cut potatoes to about the size of a half dollar and no smaller than a quarter.
- Width should be a little thicker than the average CD.
- A food processor can be used and greatly reduces time.
- Place cut potatoes in ice cold water until needed to prevent browning.
- In a separate bowl, whisk together cream, milk, garlic, salt, pepper, parsley, and flour.
- Try to reduce any clumping.
- In a 3-quart glass baking dish, coat entire dish with softened butter or margarine.
- Remove enough potatoes from the cold water to make a thin layer on the bottom of glass baking dish.
- Pour only enough cream mixture to cover potato layer.
- Continue to layer potatoes and cream.
- Make at least three layers.
- Cover with foil and bake for 20 minutes.
- After 20 minutes, remove foil and stir.
- Return potatoes to oven, uncovered, for 40 minutes.
