Harriet's Coffee Cake Recipe

This is a recipe for a rich, delicious coffee cake.

Ingredients

  • 1/2 c. margarine
  • 2 eggs
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 c sugar
  • 2 c flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 c sour cream
  • FILLING
  • 1 tsp Cinnamon
  • 1 c chocolate chips
  • 1 c chopped walnuts
  • 4 tbs brown sugar

Directions

  1. Grease and flour a loaf pan.Set oven to 350F.
  2. Cream margarine, sugar, eggs, salt and vanilla.
  3. Add flour, baking soda, baking powder.
  4. Fold in sour cream.
  5. Batter is thick and sticky. Put 1/3 of batter into prepared pan,dollop the batter and spread. Pour filling evenly over batter. Put the rest of batter on filling in the same dolloping manner. Use a silicon spatula to spread gently. Spray non-stick onto a piece of parchment and smooth the batter out.
  6. Bake for one hour.
  7. Cool 30 minutes in pan.Remove gently from pan, filling will be hot, be careful the two layers don't slide apart. Cool completely before serving.
