Sweet and Sour Chicken Recipe

A vegetable loaded sweet and sour chicken recipe that is perfect for a family meal

Ingredients

  • 1 bag of instant rice
  • 2 T corn oil
  • 1 medium red bell pepper - chopped
  • 1 8 ounce can water chestnuts -drained
  • 1 package frozen snow pea pods - 6 ounces
  • 2 cups cooked chicked - cubed
  • 1 8 ounce can pineapple bits - drained
  • 1 10 ounce bottle sweet and sour sauce
  • 1 T soy sauce
  • Rice noodles

Directions

  1. Prepare rice according to instructions
  2. Heat oil in a large skilled over high heat, add red bell peppers and water chestnuts. Stir and cook until water chestnuts are lightly browned
  3. Add snow peas, chicken and pineapple and stir-fry to 2 minutes
  4. Add sweet and sour sauce and stir fry until the mixture is hot
  5. Serve over hot prepared rice
  6. Add rice noodles if desired
