Penne With Basil, Plum Tomatoes and Salt Cured Olives Recipe

An excellent pasta recipe with fresh vegetables.

Ingredients

  • 1 lb. penne pasta
  • 8 plum tomatoes
  • 1/2 c. salt cured olives (black)
  • 1 bunch fresh basil
  • 3 cloves fresh garlic, peeled
  • 1 tbsp. olive oil
  • 1 tbsp. balsamic vinegar

Directions

  1. Wash and dry basil leaves.
  2. Place them in a food processor with garlic, olive oil and vinegar.
  3. Process until smooth, 3-4 seconds.
  4. Cook penne in boiling water; drain.
  5. Add basil mixture to penne. Stir and keep warm on stove.
  6. Slice plum tomatoes lengthwise in 1/8 inch pieces.
  7. Pit and slice olives.
  8. Heat tomatoes and olives together in separate skillet.
  9. Cook over medium heat 3 minutes.
  10. Toss tomatoes and olives in with penne mixture.
  11. Serve with freshly ground pepper and grated cheese.
