The Spinney Chicken Recipe

A healthy "fried Chicken" that kids and adults will love. The Crunchy crust and juicy and flavourful inside will make your mouth water and beg for more!

Ingredients

  • 1 cup of breadcrumbs (wholewheat, white, or Japanese panko)
  • 2 tbsp of flaxseed (grounded)
  • 3 tbsp of grated Parmesan
  • 1/2 tsp of garlic powder
  • 1 tblsp of paprika
  • 4-6 tbsp of plain yogurt
  • 1 cup of spinach or broccoli puree
  • 1 tsp of salt
  • Extra virgin olive oil
  • 1-1 1/2 pound of Chicken legs ( skinless) or chicken tenders.

Directions

  1. Grease baking pan, Preheat oven at 375 F
  2. In bowl or large zipper seal freezer bag, combine the breadcrumbs, flax, paprika, garlic powder and parmesan.
  3. In a shallow bowl or pie plate, mix the veggie puree with the yogurt
  4. Season the chicken legs or tenders with salt and pepper. Place chicken legs or tenders into yogurt/puree mixture, then toss them into the breadcrumb mixture until coated.
  5. Place breaded chicken and bake in the oven and cook until crisp and golden brown all over. About 25-30 min for legs and 15-20 for tenders.
