Spicy Chicken Curry Recipe

A very spicy chicken curry dish served with rice or pita bread. **very spicy!**

Ingredients

  • 2 lbs chicken breasts- cubed (1 inch)
  • 1 large onion- chopped
  • 2 cans coconut milk
  • 2 jalapenos- chopped
  • 1 can chopped tomatoes in sauce
  • 1 bay leaf
  • 1/2 tsp. turmeric
  • 1 tsp. fennel seeds (whole)
  • 1 tsp. ground cumin seed
  • 1 Tbs. meat masala
  • 2 Tbs. chili powder
  • 1 Tbs. curry paste (tomato & cumin based)
  • 1 Tbs. honey
  • 2 Tbs. cornstarch

Directions

  1. Using a medium sized stove-top pot, add onion, coconut milk, jalapenos, tomatoes with sauce, bay leaf, turmeric, fennel seeds, ground cumin seed, meat masala, chili powder, and curry paste.
  2. Bring mixture to a simmer on medium heat for about 15 minutes ( this is a good time to cut up the chicken breasts).
  3. Add cubed chicken to mixture and continue to simmer on medium heat.
  4. Add honey to heated mixture and continue to simmer for 2 hrs on med-med low heat.
  5. Stir occasionally.
  6. Taste after one hour. Add more spice (chili powder or jalapeƱos) if desired.
  7. With 5 minutes left, add cornstarch.
  8. **First mix cornstarch with just enough cold water to dissolve the cornstarch in SEPARATE measuring cup and THEN add to your hot curry slowly**
  9. After stirring in cornstarch, allow curry to thicken and then serve over rice or with pita bread.
