Spicy Chicken Curry Recipe
A very spicy chicken curry dish served with rice or pita bread. **very spicy!**
Ingredients
- 2 lbs chicken breasts- cubed (1 inch)
- 1 large onion- chopped
- 2 cans coconut milk
- 2 jalapenos- chopped
- 1 can chopped tomatoes in sauce
- 1 bay leaf
- 1/2 tsp. turmeric
- 1 tsp. fennel seeds (whole)
- 1 tsp. ground cumin seed
- 1 Tbs. meat masala
- 2 Tbs. chili powder
- 1 Tbs. curry paste (tomato & cumin based)
- 1 Tbs. honey
- 2 Tbs. cornstarch
Directions
- Using a medium sized stove-top pot, add onion, coconut milk, jalapenos, tomatoes with sauce, bay leaf, turmeric, fennel seeds, ground cumin seed, meat masala, chili powder, and curry paste.
- Bring mixture to a simmer on medium heat for about 15 minutes ( this is a good time to cut up the chicken breasts).
- Add cubed chicken to mixture and continue to simmer on medium heat.
- Add honey to heated mixture and continue to simmer for 2 hrs on med-med low heat.
- Stir occasionally.
- Taste after one hour. Add more spice (chili powder or jalapeƱos) if desired.
- With 5 minutes left, add cornstarch.
- **First mix cornstarch with just enough cold water to dissolve the cornstarch in SEPARATE measuring cup and THEN add to your hot curry slowly**
- After stirring in cornstarch, allow curry to thicken and then serve over rice or with pita bread.
