Fresh Tomato Crab Soup Recipe

You can make this with canned tomatos but diced fresh Hanover tomatos take this crab soup recipe to a entire different level.

Ingredients

  • 2 T olive oil
  • 2 cloves garlic, minced
  • 1/4 cup chopped onion
  • 1 Can condensed tomato soup
  • 2 large fresh tomatos, diced
  • 1 Can lump crabmeat (approx 6 oz)
  • 1 Pint half-and-half

Directions

  1. In a large saucepan, saute garlic and onion until softened
  2. Stir in diced tomatos, can of tomato soup, and lump crabmeat and heat thoroughly over medium heat.
  3. Once heated, gently stir in half and half, then warm until it just starts to bubble.
  4. Serve with oyster crackers or saltine type cracker.
