Cheesy Green Beans Recipe
Do your kids balk at green beans but crave macaroni and cheese? How about taking the cheese from the mac and cheese and combining it with the green beans. What do you get? A tastey casserole type dish that will make your kids crave more!
Ingredients
- 3 T butter or margarine, divided
- 1 T all-purpose flour
- 1 t dried minced onion
- 1 t sugar
- 1/4 t salt
- 1/4 t pepper
- 1 C sour cream
- 4 to 6 C French-style green beans, cooked and drained
- 1/2 C crushed cornflakes
- 1 C Shredded sharp cheddar or Swiss cheese
Directions
- Melt 2 tablespoons of butter in a large saucepan
- While whisking, add flour, onion, sugar, salt and pepper to form a smooth paste
- Bring mixture to a light boil, stir regularly and cook for 1 minute or until thickened
- Reduce heat and stir in sour cream until the mixture is smooth.
- Keep on low heat and stir for 2 minutes (do not allow the mixture to boil)
- Fold in beans until the mixture is thoroughly mixed.
- Spoon in to a greased shallow 1-1/2 quart baking dish
- Melt remaining butter and toss with cornflake crumbs, then sprinkle both shredded cheese and crumb mixture over bean mixture
- Bake, uncovered, at 400 degrees for 20 minutes or until heated through
