Mexican Chopped Chicken Salad Recipe
Light, tasty, not really Mexican. But, the chips and beans surely give it a Tex-Mex type vibe.
Recipe Ingredients
- 6 Cups shredded lettuce
- 1 bag tortilla chips (crumbled lightly)
- 2 Cups cooked chicken (cubed)
- 1 can kidney beans (rinsed and drained)
- 1/2 cup ranch dressing
- 1/2 cup shredded cheddar cheese
Directions
- Combine all ingredients in a large bowl and garnish with black olives and/or chopped tomatos
