Pumpkin Butter Recipe

A wonderful spread for those who are pumpkin lovers. It just puts a wonderful smell in the kitchen in the fall around Halloween and Thanksgiving.

Ingredients

  • 15 oz. Can pumpkin
  • 3 T powdered pectin
  • 1 t. cinnamon
  • 1/2 t. allspice
  • 2 1/4 cup sugar

Directions

  1. In a 2-qt. microwave bowl, combine pumpkin, pectin, cinnamon and allspice. Mix well. Microwave on HIGH for 6 minutes or until very hot, mixing every 2 minutes. Add sugar; mix well. Microwave on high for 5 to 10 minutes or until full rolling boil, stirring once during cooking. Continue to boil for one minute. Spoon into 3 sterilized 8-ounce jars. Screw lids tight. Store in refrigerator up to 3 weeks or freeze up to 3 months.
