Easy Chicken Tarragon Recipe

A very quick and easy chicken tarragon recipe. Give it a try, I think you'll like it.

Ingredients

  • 3-4 pound cut up chicken (with or without skin)
  • 2 cans Cream of Chicken (may use low fat and/or low salt)
  • Juice of 1/2 fresh lemon( fresh is best)
  • Two generous tsps. dried tarragon(do not use fresh)

Directions

  1. Place cleaned and dried chicken in one layer in 9x12 pan or any appropriate oven baking dish.
  2. Spread both cans of soup right from the can over the chicken.
  3. Sprinkle with lemon juice and terragon.
  4. Bake in 375 degrees for 1 hour to 1 and 1/2 hours until chicken registers 180 degrees or juices run clear. I cover with foil for 1/2 of the cooking time.
  5. Pour pan juices over chicken and rice or mashed potatoes. Yum!
