Eggplant Parmesan Recipe

A great eggplant parmesan recipe that is simple to make. Freezes well for later

Ingredients

  • 1 large eggplant (2 medium work well also)
  • 2 eggs, beaten
  • 1 1/4 cups dry seasoned bread crumbs
  • 1/2 cup olive oil
  • 1 package sliced mozzarella cheese (8 oz)
  • 1 jar spaghetti sauce (16 oz)
  • 4 T grated parmesan cheese

Directions

  1. Peel eggplant and slice into 1/4 inch slices.
  2. Dip eggplant slices into beaten egg, then coat with breadcrumbs.
  3. Fry eggplant slices in hot oil for a couple minutes on each side or until browned
  4. Pat fried eggplant slices with paper towel to remove excess oil
  5. Layer half of the eggplant slices on the bottom of a baking pan, top with half of the mozzarella slices, and half of spaghetti sauce.
  6. Repeat with the remaining eggplant, cheese, and spaghetti sauce.
  7. Spread parmesan cheese over the entire mixture, then bake at 400F for 20 minutes or until sauce is bubbly and cheese is melted.
  8. Serve plain, or over freshly prepared angel hair pasta
