Eggplant Parmesan Recipe
A great eggplant parmesan recipe that is simple to make. Freezes well for later

Ingredients
- 1 large eggplant (2 medium work well also)
- 2 eggs, beaten
- 1 1/4 cups dry seasoned bread crumbs
- 1/2 cup olive oil
- 1 package sliced mozzarella cheese (8 oz)
- 1 jar spaghetti sauce (16 oz)
- 4 T grated parmesan cheese
Directions
- Peel eggplant and slice into 1/4 inch slices.
- Dip eggplant slices into beaten egg, then coat with breadcrumbs.
- Fry eggplant slices in hot oil for a couple minutes on each side or until browned
- Pat fried eggplant slices with paper towel to remove excess oil
- Layer half of the eggplant slices on the bottom of a baking pan, top with half of the mozzarella slices, and half of spaghetti sauce.
- Repeat with the remaining eggplant, cheese, and spaghetti sauce.
- Spread parmesan cheese over the entire mixture, then bake at 400F for 20 minutes or until sauce is bubbly and cheese is melted.
- Serve plain, or over freshly prepared angel hair pasta
