Fresh Tomato Soup Recipe

Easy to make fresh tomato soup recipe

Ingredients

  • 6 ea Tomatoes; Medium Size OR
  • 2 lb Italian Plum Tomatoes
  • 1 ea Onion; Chopped
  • 1 ea Celery; Stalk, Chopped
  • 2 c Chicken Broth
  • 1 T Tomato Paste
  • 1/2 t Basil; Dried
  • 1/4 t Pepper; Freshly Ground
  • 1/2 t Salt
  • 1/2 c Yogurt

Directions

  1. Cut tomatoes into wedges and place in 1 1/2-quart saucepan with all ingredients except yogurt
  2. Simmer uncovered 30 minutes
  3. Strain to remove tomato skins and seeds
  4. Adjust seasonings
  5. Garnish with spoonfuls of yogurt.
