Cucumber and Potato Soup Recipe

Not your everyday soup, but this has a nice taste

Ingredients

  • 1 Medium Cucumber
  • 4 Medium Potatoes, Peeled And Diced
  • 1 t Salt
  • 2 C Cold Water
  • 1/4 t Pepper; White
  • 1 c Cream; Heavy
  • 1/2 c Milk
  • 1 Green Onion, Grated
  • 1 t Dillweed Dried or 1 T Chopped Fresh Dill

Directions

  1. Peel the cucumber and slice it lengthwise. Scoop out seeds with a spoon and discard. Dice
  2. In a heavy 2 1/2-quart saucepan boil potatoes in salted water until the potatoes are very soft
  3. Pour potatoes and cooking liquid into a sieve or food mill set over a large bowl. Force potatoes through, then return to the saucepan
  4. Stir in pepper, cream, milk, grated onion and the cucumber
  5. Simmer gently about 5 minutes or until the cucumber is tender
  6. Add dill and season to taste
  7. Serve hot.
