Mashed Potatoes with Horseradish Cream Recipe

Great mashed potato recipe

Ingredients

  • 5 ea Potatoes; Medium
  • 1/2 t Salt
  • 2 T Butter
  • Freshly Ground Pepper
  • 1/2 c Sour Cream
  • 1 T Horseradish
  • 2 t Parsley; Minced

Directions

  1. Peel and quarter potatoes
  2. Cook in boiling salted water in medium-size saucepan until tender, drain
  3. Mash, adding 1 T butter and the pepper
  4. Add sour cream, horseradish, and minced parsley
  5. Whip as for mashed potatoes
  6. Place in serving bowl; top with 1 T melted butter and serve.
