Cheesy Muffin Melt Recipe

Wonderful open face sandwich for the vegetarian

Ingredients

  • 1 1/2 c Cottage Cheese; Creamed
  • 1/2 c Wheat Germ; Regular
  • 2 T Green Chiles; Chopped
  • 1/4 t Oregano Leaves; Crushed
  • 1/4 t Basil Leaves; Crushed
  • 1/4 t Salt
  • 3 Whole Wheat English Muffins, halved and toasted
  • 6 Tomato Slices
  • Sharp Cheddar Cheese Slices

Directions

  1. Combine the cottage cheese, wheat germ, chiles, and seasonings, blending well
  2. Mound onto toasted muffins
  3. Top with tomato slices and criss-cross with cheddar strips
  4. Broil 3 to 4 inches from the heat until the cheddar melts, about 5 minutes
  5. Makes 6 open faced sandwiches.
