Venison and baby portabella stroganoff Recipe

Rich stroganoff recipe. Great for introducing someone to wild game.

Ingredients

  • 1.5 lbs venison
  • 1/2 lb baby portabellas
  • 1 med. onion (minced)
  • 1/4 cup oil (olive,veg.,or peanut)
  • 1/2 cup red whine
  • 1/2 cup stock (venison or beef)
  • 1/2 cup sour cream
  • pepper (to taste)
  • salt (to taste)
  • paprika (to taste)
  • 2 tbsp finely chopped dill
  • flour (for dusting)
  • 1 12 0z bag of egg noodles

Directions

  1. Dust venison with flour and shake off excess.
  2. Heat oil in a large sauce pan. When hot, add venison and onion.
  3. When venison is browned add dill, mushrooms, and paprika. Stir frequently for 2 minutes.
  4. Add the red whine and stock. Bring to a hard boil and then reduce heat and simmer for 10 minutes.
  5. Boil egg noodles in a large pot.
  6. Add sour cream to the stroganoff and allow to heat through.
  7. Add salt and pepper to taste.
  8. Serve stroganoff over a bed of egg noodles.
