Cheesy Potato Soup Recipe

Smooth and creamy potato soup

Recipe Ingredients

  • 5lbs. red potatoes
  • 1 8oz. can of sliced carrots
  • 2 chicken bullion cubes
  • 12 oz. Velveeta cheese spread
  • salt
  • pepper
  • parsley
  • 6 cups boiling water

Directions

  1. Peel and cube potatoes.
  2. Put potaotes in water and bring to a boil.
  3. Add carrots, bullion cubes, and 1 tsp.salt (or to taste).
  4. Cook on med heat until potatoes are tender. (Carrots will almost dissolve.)
  5. Stir slightly. Turn off heat.
  6. Add Velveeta Cheese spread and stir until melted and smooth.
  7. Add pepper to taste.
  8. Garnish with parsley.
