Crab Macaroni Salad Recipe

This makes a nice luncheon dish when garnished correctly and served with my recipe for cheese toast

Ingredients

  • 8 oz. enrished medium shell macaroni
  • 1 cup small curd cream style cottage cheese (8 oz)
  • 1/4 cup chili sauce
  • 2 tbsp. low-cal creamy French dressing
  • 1 tsp. Worchestershire sauce
  • 2 tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 cup finely chopped green pepper
  • 1/2 cup finely chopped green onion, tops included
  • 3/4 cup cooked crabmeat (7 1/2 oz can or 6 oz pkg. frozen can be substituted
  • Asparagus spears
  • Cherry tomatoes

Directions

  1. Cook macaroni according to package directions.
  2. Combine cottage cheese, chili sauce, lemon juice, french dressing, worchestershire sauce, salt, green pepper, green onion and crab meat. Fold in macaroni.
  3. Chill several hours or over night.
  4. Served salad with asparagus spears lightly dressed with lemon juice plus garnished with two cherry tomatoes.
  5. Serve with cheese toast. (See recipe)
