Pasta Al Pesto Recipe

Very simple pasta recipe. This is best with freshly made pesto.

Ingredients

  • 8 oz Pasta (preferably linguine)
  • 3 Carrots, thinly sliced
  • 2 tb Safflower or Olive oil
  • 3 Sm Zucchini, thinly sliced
  • 1/4 lb Peapods
  • Pesto

Directions

  1. Prepare pasta according to directions on the box
  2. Steam carrots
  3. Meanwhile, in skillet, heat oil
  4. Add zucchini and peapods
  5. Stir continuously until crisp/tender
  6. When pasta is done, drain well; toss pesto with noodles until they are well coated
  7. Then toss in vegetables
  8. Garnish with pepper and cheese
