Chick Pea - Zucchini Curry Recipe

An excellent match of chick peas with the pasta. This is an awesome recipe, that is an excellent vegetarian recipe.

Ingredients

  • 8 oz Pasta, thin egg or whole wheat spaghetti
  • 2 tb Safflower Oil
  • 1 Small Onion, chopped (1/4 cup)
  • 1 Clove Garlic, minced
  • 1 1/2 c Sliced Mushrooms (4 oz)
  • 2 Medium Zucchini, sliced
  • 1 Large Tomato, cubed
  • 15 oz Can Chick peas,drained(1.5 c
  • 6 oz Can Tomato paste (2/3 c)
  • 2 ts Curry powder, to taste
  • 1 c Water
  • 1/4 ts Black pepper

Directions

  1. Boil a large pot of water; cook pasta until al dente
  2. While pasta is cooking, heat oil in a saucepan
  3. Add onion, garlic, mushrooms, and zucchini
  4. Saute until zucchini is tender but not mushy
  5. Stir in remaining ingredients and cook over medium heat, covered, for about 8 minutes
  6. When pasta is done, drain well
  7. Spoon vegetables over pasta
  8. Garnish with scallion curls
