Cheddar Pecan Wafers Recipe

These delicious savory biscuits are a delightful snack at cocktail parties. But beware, once you start, it's hard to stop eating them!

Ingredients

  • 1 lb. sharp cheddar cheese, shredded
  • 1 lb. butter, softened
  • 4-1/2 cups flour
  • 1 tsp. cayenne pepper
  • 1 tsp. salt
  • 1 cup chopped pecans

Directions

  1. In a large bowl, cream together the softened butter, cheese, cayenne, salt, and pecans.
  2. Gradually incorporate the flour - it's easiest to just use your hands at the end, as the result will be a very firm dough, similar to shortbread.
  3. Roll the dough into logs 10-12 inches in length and about 1 inch in diameter. Wrap the logs in waxed paper and chill thoroughly, at least 2 to 3 hours.
  4. Slice the chilled logs into 1/4 wafers using a sharp knife. Bake on a parchment-lined cookie sheet at 350 degrees for exactly 12 minutes. Allow the biscuits to cool for a minute or two before removing them from the sheet.
  5. The logs of dough will freeze beautifully, so you can make as many wafers as you like, and keep the remaining dough on hand for another occasion.
