Beef Taco Casserole Recipe

Easy to make casserole, only hitch is you need thinly sliced sandwich steaks. This recipe came from http://www.quakermaidmeats.com . I usually use the Philly Gourmet Sandwich Steaks because they are already thinly sliced and 100% pure beef. You can find these sandwich steaks at Safeway Stores (Vons, Pavillions, Dominicks, Carrs,etc.) To find a Safeway near you use the store locator here: http://direct.where2getit.com/safeway/

Ingredients

  • 12 Philly Gourmet Sandwich Steaks (thinly sliced, can use sliced ribeye as well)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp chili powder
  • 11 oz. can tomato soup
  • 14 oz. can chili beans
  • 10.5 oz. bag of corn chips
  • 1/3 cup ripe olives
  • 1/2 cup chopped onion
  • 1 cup grated cheddar

Directions

  1. Preheat Oven to 375
  2. Cook and toss sandwich steaks in iron skillet until browned but not overcooked
  3. season with salt, pepper & chili powder
  4. mix in tomatoe soup & chili beans
  5. cook slowly for a few minutes to blend the flavors
  6. spread corn chips in a baking dish
  7. pour the meat mixture in the baking dish on top of the chips
  8. top with olives, onion & cheddar
  9. bake in oven until cheese melts, serve piping hot
  10. enjoy!
