Artichoke Spinach Dip Recipe

Another artichoke dip. The mixture of spinach and artichokes really has a nice taste.

Ingredients

  • 1 1/2 oz artichokes drained
  • 3/4 c Mayonnaise
  • 1/2 ts Grated lemon rind
  • 1 ea Salt and pepperr
  • 10 oz Bag spinach
  • 3 tb Lemon juice
  • Tabasco to taste

Directions

  1. Chop artichoke hearts in food processor fitted with steel blade then set aside
  2. Wash spinach well, then blanch in boiling water; drain; squeeze dry and chop in food processor
  3. Add chopped artichoke hearts and remaining ingredients and process just until blended
  4. Best prepared a day in advance and served with fresh cut vegetable sticks
