Barvarian Potato Salad Recipe

Not your typical American mayonaisse based potato salad.

Ingredients

  • 4 c Potatoes
  • 1/2 ts Salt
  • 1/3 c Onion; chopped
  • 2 tb Lemon juice
  • 2 c Chicken broth
  • 1/4 c Vegetable oil
  • 1/2 ts Sugar
  • Pepper as desired

Directions

  1. Peel and slice potatoes into 1/4-inch thick slices
  2. Boil potatoes in broth with 1/4 t salt for 5 to 8 minutes, until tender, then drain
  3. Toss warm potatoes with vegetable oil and onions
  4. Dissolve remaining 1/4 t salt and the sugar in lemon juice
  5. Pour over potatoes
  6. Marinate salad 1 to 2 hours before serving
  7. Serve at room temperature.
