Grandma's Persimmon Puddding Recipe

Wonderful if made from the pulp of the wild persimmon. I purchase my pulp from Melton's Orchard 812-825-2737 They will ship it anywhere overnight air.

Ingredients

  • 2 cups persimmon pulp
  • 2 eggs beaten
  • 2 tsp baking powder
  • 1 cup buttermilk
  • 1/3 cup melted butter
  • 2 cups sugar
  • 1 3/4 cup flour
  • 1 cup half and half
  • 1 tsp baking soda
  • dash of cinnamon

Directions

  1. Combine persimmon pulp, sugar, eggs cream and buttermilk.
  2. Mix flour, baking powder and baking soda and add to persimmon mixture.
  3. Use some of the melted butter to coat a 9x13 baking pan.
  4. Stir remaining butter into persimmon mixture.
  5. Stir in cinnamon and mix well.
  6. Pour into baking pan
  7. Bake 325 degrees for about 60 minutes.
