Cathy's Baked Chicken Recipe

Very little prep time is needed to get this chicken going. Pop in the oven, and pull out when ready!

Ingredients

  • 2 Chicken breasts, halved
  • 1/2 ts Onion powder
  • 1/4 ts Cayenne pepper
  • 1/3 c Plain low-fat yogurt
  • 1 c Fresh bread crumbs
  • 1/2 ts Garlic powder
  • 1/8 ts Ground ginger

Directions

  1. Preheat oven to 400F
  2. Lightly spray a medium size baking dish with vegetable spray
  3. Rinse chicken and pat dry
  4. In a shallow pan, combine bread crumbs, onion powder, garlic powder, cayenne pepper and ginger
  5. Dip chicken in yogurt, then into crumb mixture
  6. Place in prepared dish
  7. Bake uncovered, 45 to 50 min, or until tender
