Chicken with Mustard and Wine Sauce Recipe

Pairing this chicken with herbed rice provides a wonderful meal for the family.

Ingredients

  • 1 Frying chicken
  • 2 Large garlic cloves sliced
  • 1/2 c Dry white wine
  • Salt and pepper to taste
  • 1/4 c Whipping cream
  • 2 tb Oil, preferably peanut
  • 2 tb Chopped shallots
  • 1 c Leeks, sliced into 2
  • 3 tb Dijon mustard

Directions

  1. Cut chicken into serving size pieces
  2. Saute in hot oil until browned
  3. Remove from pan, drain all but a little oil from pan
  4. Add garlic and shallots; cook 1 minute
  5. Add wine and return chicken to pan
  6. Cover and simmer until tender, about 15 minutes
  7. Increase heat, add leeks, toss and cook briefly
  8. Season with salt and pepper
  9. Cover and cook over medium heat for 3 minutes, then stir in mustard and cream gently
  10. Thin sauce with additional wine if necessary.
