Kalua Pig Recipe

You Don't Need To Be In Hawaii For This Traditional Meal - ONO-delicious!

Ingredients

  • 6 lbs. Boneless Pork Butt
  • Rock Salt
  • Ti or Banana Leaves (Optional)
  • 1/2 bottle Liquid Smoke
  • Heavy Duty Aluminum Foil

Directions

  1. Make deep slashes in pork. Rub rock salt in cuts. Spread ti or banana leaves on large sheet of aluminum foil (instead of leaves use 2 layers of aluminum foil).
  2. Place pork on leaves (foil). Pour liquid smoke over pork and rub in the meat. Wrap foil around pork and foil or tie together to seal.
  3. Refrigerate overnite.
  4. Cook at 500 degrees for one hour, then lower heat to 400 degrees and cook for 4 hours.
  5. Meat will come off in shreads when done.
