Grilled Veggies Recipe
Fresh vegetables, grilled over a charcoal (or propane) grill. Hmmm.

Ingredients
- 1 large zucchini squash
- 1 large yellow squash
- 2 cups baby carrots
- 2 cups whole mushrooms
- 1 red pepper
- 1/2 cup olive oil
- 1 tbsp Salad Delight
- 1 large sweet onion (optional)
Directions
- Cut squash into medallions, and onions into slivers if you are including them (they really add a nice flavor)
- Put all veggies in a gallon plastic bag or large sealable plastic container
- Pour olive oil and Salad Delight over veggies
- Seal and shake veggies so that they coated well with the olive oil and Salad Delight. You can also spinkle fresh ground pepper on. I like to let them sit in the mixture for 5 to 10 minutes.
- Over a well heated grill, pour veggies into a stick-free grilling tray/bowl. Grill for 10-15 minutes turning frequently until charring is uniform.
- Pour grilled mixture into a aluminum foil pocket, fold shut, and leave on grill for 10-20 minutes depending on how soft you like your veggies. This steams in the flavor as it softens the veggies, and is also a great time to grill an accompanying meat dish if you choose.
- Serve warm and enjoy!
