Zucchini Bread Recipe

Fresh zucchini bread is excellent!

Ingredients

  • 3 C all purpose flour
  • 2 t baking soda
  • 1 t salt
  • 1/2 t baking powder
  • 3/4 C finely chopped pecans (optional)
  • 3 eggs
  • 2 C sugar
  • 1/2 C vegetable oil (see next ingredient)
  • 1/2 C applesauce (or 1 C oil instead of 1/2 each)
  • 2 t vanilla
  • 2 C shredded zucchini
  • 1 8 oz can of crushed pineapple (well drained)

Directions

  1. Combine first 5 ingredients and set aside.
  2. Beat eggs lightly in a large mixing bowl. Add sugar, oil (applesauce), and vanilla. Beat until creamy.
  3. Stir in zucchini, pineapple, and pecans if using.
  4. Add dry ingredients and stir only until moistened.
  5. Spoon batter into 2 well greased and floured 8” X 4” X 3” loaf pans.
  6. Bake at 350 for 1 hour – cool 10 minutes in pans.
