Zucchini Bread Recipe
Fresh zucchini bread is excellent!

Ingredients
- 3 C all purpose flour
- 2 t baking soda
- 1 t salt
- 1/2 t baking powder
- 3/4 C finely chopped pecans (optional)
- 3 eggs
- 2 C sugar
- 1/2 C vegetable oil (see next ingredient)
- 1/2 C applesauce (or 1 C oil instead of 1/2 each)
- 2 t vanilla
- 2 C shredded zucchini
- 1 8 oz can of crushed pineapple (well drained)
Directions
- Combine first 5 ingredients and set aside.
- Beat eggs lightly in a large mixing bowl. Add sugar, oil (applesauce), and vanilla. Beat until creamy.
- Stir in zucchini, pineapple, and pecans if using.
- Add dry ingredients and stir only until moistened.
- Spoon batter into 2 well greased and floured 8” X 4” X 3” loaf pans.
- Bake at 350 for 1 hour – cool 10 minutes in pans.
