Florida Red Snapper Recipe

Simple fish recipe

Ingredients

  • 2 lb Red snapper fillets
  • 2 tb Orange juice
  • 2 ts Grated orange rind
  • 1/8 ts Nutmeg
  • 1/4 c Grated onion
  • 2 tb Lemon juice
  • 1/2 ts Salt

Directions

  1. Thaw fillets if frozen
  2. Cut fish into 6 portions
  3. Place in a single layer, skin side down, in a well-greased baking dish, 12x8x2 inches
  4. Combine onion, orange and lemon juice, ornage rind, and salt
  5. Pour over fish; cover and place in refrigerator to marinate 30 minutes
  6. Sprinkle fish with nutmeg and pepper
  7. Bake in a moderate oven, 350F, for 25 to 30 minutes or until fish flakes easily when tested with fork.
