Fresh Tomato Soup Recipe

An oh so simple tomato soup recipe. Just throw the ingredients together, cook, strain, top, EAT!

Ingredients

  • 6 Tomatoes; medium size
  • 1 Onion, chopped
  • 2 c Chicken broth
  • 1/2 ts Basil; dried
  • 1/2 ts Salt
  • 2 lb Italian plum tomatoes
  • 1 Celery stalk, chopped
  • 1 tb Tomato paste
  • 1/4 ts Pepper; freshly ground
  • 1/2 c Yogurt

Directions

  1. Cut tomatoes into wedges and place in 1 1/2-quart saucepan with all ingredients except yogurt
  2. Simmer uncovered 30 minutes
  3. Strain to remove tomato skins and seeds
  4. Adjust seasonings
  5. Garnish with spoonfuls of yogurt.
