Salmon Casserole Recipe

Simple casserole recipe for a the busy family. Can be made in advance, and makes great leftovers.

Ingredients

  • 1 Can Red Salmon (1 lb)
  • 1 C Flour
  • 1 t baking powder
  • 1 t salt
  • 3 eggs
  • 1/2 C italian salad dressing
  • 4 oz pimento (do not drain)
  • 1 can cut green beans (16 oz)
  • 1 package brown gravy mix
  • 1/2 C mayonaise
  • 1/3 C water

Directions

  1. Drain and flake salmon, set liquid aside for later
  2. In a mixing bowl, combine flour, baking soda, salt, eggs, salad dressing, and 1/3 C salmon liquid. Beat until smooth.
  3. Stir in pimento, beans, and salmon. Mix well.
  4. Pour into greased 2 quart casserole dish
  5. Mix topping in a small bowl - mix brown gravy mix, mayonaise, and water. Spread topping over casserole mixture.
  6. Bake 50-60 minutes at 350 degrees, or until knife can be inserted and removed cleanly.
