Grilled Lime Chicken Recipe

The marinade for this grilled chicken recipe is the key. A nice change from basic barbeque chicken.

Ingredients

  • 1/4 c Chopped fresh parsley
  • 1/2 ts Grated lime rind
  • 1 c Dry white wine (or chablis)
  • 1/2 ts Freshly ground pepper
  • 2 tb Lime juice
  • 6 Boneless, skinless, chicken breasts (approx 4 oz each)

Directions

  1. Combine all ingredients except chicken in a shallow baking dish
  2. Add chicken, turning to coat
  3. Cover and marinate in refrigerator for 1 day
  4. Remove chicken from marinade, reserving marinade
  5. Coat grill rack with cooking spray, place rack on grill over med-hot coals
  6. Place chicken on rack, and cook 5 minutes on each side or until done, basting with reserved marinade
