Spaghetti Squash Recipe

A great vegetable side dish

Ingredients

  • 1 Spaghetti Squash
  • 3 T olive oil
  • 2 T grated parmesan cheese

Directions

  1. Preheat over to 350F. Slice spaghetti squash in half lengthwise and scrape out seeds (compost please!)
  2. Place two halves of squash face down on baking pan that has been sprayed with a non-stick cooking spray and bake for 30-50 minutes depending on size of squash
  3. Turn squash over and check for tenderness with a fork every 10 minutes starting at 30 minutes. If tender remove from oven, otherwise place face down and bake an additional 10 minutes (large squash - longer time, small squash can be ready in 30 minutes)
  4. Combine olive oil and parmesan cheese in mixing bowl. Scrape squash from shell into mixing bowl and stir to evenly coat mixture
  5. Add additional olive oil and parmesan to taste. Serve as side dish (can be a main course with a nice salad).
