Spaghetti Squash Recipe
A great vegetable side dish

Ingredients
- 1 Spaghetti Squash
- 3 T olive oil
- 2 T grated parmesan cheese
Directions
- Preheat over to 350F. Slice spaghetti squash in half lengthwise and scrape out seeds (compost please!)
- Place two halves of squash face down on baking pan that has been sprayed with a non-stick cooking spray and bake for 30-50 minutes depending on size of squash
- Turn squash over and check for tenderness with a fork every 10 minutes starting at 30 minutes. If tender remove from oven, otherwise place face down and bake an additional 10 minutes (large squash - longer time, small squash can be ready in 30 minutes)
- Combine olive oil and parmesan cheese in mixing bowl. Scrape squash from shell into mixing bowl and stir to evenly coat mixture
- Add additional olive oil and parmesan to taste. Serve as side dish (can be a main course with a nice salad).
