Kale and Potato Soup Recipe

A little different soup recipe

Ingredients

  • 4 Potatoes; medium
  • 8 c Water
  • 1/2 ts Pepper
  • 1/2 lb Garlic sausage, smoked, cooked and sliced
  • 2 tb Vegetable oil
  • 1 ts Salt
  • 2 lb Kale; fresh

Directions

  1. Peel and chop potatoes
  2. Combine with vegetable oil and water
  3. Cook for 20 to 30 minutes or until potatos are tender
  4. Remove potatos and reserve liquid
  5. Mash potatoes through a sieve and return to potato liquid
  6. Add salt and pepper and simmer for 20 minutes
  7. Wash kale discarding all tough leaves and cut into shreds
  8. Add to potatoes and cook for 25 minutes
  9. Add sausage
  10. Simmer gently for 5 minutes.
