Leek and Potato Gratin Recipe

A very simple gratin recipe to make. Keeps well in the refrigerator as well, if you want to make it ahead of time for a picnic.

Ingredients

  • 2 tb Margarine
  • 1 Red bell pepper, diced
  • 1 c Hot water
  • 6 oz Evaporated skim milk
  • 1 c Grated mozzarella
  • 2 Lg leeks, white part chopped
  • 3 Matzos, broken
  • 4 Potatoes, baked, peeled and sliced
  • Salt and pepper
  • Minced chives for topping

Directions

  1. Preheat oven to 350F
  2. Heat margarine in skillet
  3. Add leeks and saute, cover until wilted
  4. Add red pepper saute 5 min. Combine matzos with water in bowl, soak 3 to 5 minutes until soft
  5. Drain, squeeze out excess water.
  6. Combine leek mixture and matzos with remaining ingredients, except cheese and chives, sturring until fully mixed.
  7. Pour into an oiled shallow 2 quart casserole dish
  8. Sprinkle cheese over top, then chives
  9. Bake 35 to 40 min, or until the top is golden
  10. Cool for 5 to 10 minutes, then cut and serve
